Marhaba! I’m Nahla…
As many of you know, I was born and raised in Anfeh, a picturesque seaside town in Lebanon, where the sun sets each evening over the shores of our ancient Phoenician heritage, as fishermen head out into the sunset for their nightly catch. Growing up in a big, loving family, I was profoundly inspired by my mother’s and relatives’ delicious homemade dishes.
I began cooking at a very young age. What started as a fun activity quickly grew into a lifelong passion. Some of my favorite memories are of hosting friends and family in my twenties and thirties—it was always a time for creativity and joy. I remember being asked once, How can you plan and prepare a lunch or dinner for twelve people in just a few hours? My answer? It’s easy when you follow your passion and enjoy the creative process.
Even today, my life is full of excitement when I step into a farmers market, spot fresh produce, plan a meal for loved ones, or check ingredients for my next cooking class. Seasonal vegetables, greens, legumes, and local meats bring life to my recipes, which I carefully test in my kitchen—a place where I find peace, joy, and happiness.
After moving to Bellingham, WA, in 1997, I felt called to reconnect with my Mediterranean roots and help others explore the rich, healthy flavors of Middle Eastern cuisine.
